Rocket, Pear, Walnut And Blue Cheese Salad

When making this salad you need to consider sultana bran. The appeal of sultana bran is the contrast between mouthful after mouthful of the fairly bland bran and the odd sultana punctuating the experience with a hint of sweetness.  Now most people, myself included, have at some point added sultanas to the sultana bran which invariably leads to there being too many sultanas and the loss of the whole point.  This salad is much the same, the rocket providing a base line, with the occasional hint of sweet pear, salty cheese, and nutty walnuts. For this reason the quantities given are approximate, good judgement will see you through.
 
Ingredients:

  • 2 lge handfuls of rocket (watercress and other greens can be used as an alternative)
  • 1 generous handful of cubed pear
  • 1 generous handful of cubed blue cheese (stilton would be perfect)
  • 1 handful of toasted walnuts
  • extra virgin olive oil or walnut oil
  • verjuice or white wine vinegar or lemon juice
  • salt and freshly ground white pepper

   
Method: 
Combine salad ingredients in a large bowl. for the dressing I have included several options, dependent on personal preference, the only guidelines i recommend is 3 parts oil to 1 part acid.  If using walnut oil dilute with another oil otherwise it tends to dominate, and season well with salt and pepper.  I would also recommend being sparing with the dressing.
