How Do I Serve Cheese?

Serve all cheeses at room temperature! Remove cheeses from the refrigerator at least 1 hr before serving. Hard cheeses take longer to reach room temperature. Cheese displays well on wood or marble or stone boards, surrounded by fruits, nuts, crusty bread and wine. Try to avoid cubing or slicing in advance, and put out one cheese knife per cheese.

After dinner cheeses would typically start with a fresh cheese (chevre) or bloomy rind (camembert); then a semi soft or medium cheese (morbier or cheddar); then a harder cheese (an aged gouda ); finally a blue (Roquefort):
As a hors d'oeuvres, avoid sweet triple creams (which are more for dessert). Stick to bloomy rinds, medium washed rinds or semi softs.

A cheese plate is arranged in clockwise fashion with the first cheese at 12 o'clock on the plate.
It's a good idea to vary the milk types as well (cow, sheep and goat) don't be afraid to experiment!

What wine goes with what cheese? A simplified guide.

Fresh cheeses: sweet wines, dry wines and rose

Soft bloomy rinds: medium reds and ciders

Washed rinds: dry whites, beer and ales, full bodied reds

Semi soft (uncooked): medium reds

Semi soft (cooked): fruity whites, full bodied reds

Goats cheese: whites, reds

Blues: sweet wines, port, light reds

What else to serve with cheese?

Nuts like almonds help bring out the flavour and aroma of cheese. Toasted hazelnuts and walnuts work with cheese, and pecans go well with sweet cheeses.

Olives compliment sheep and goats milk cheese. Experiment with dried fruits like raisins, figs, dates and berries.

Chutneys work perfectly with cheddar and hard cheese, as does chevre and is simply delicious.

Fruit pastes work well with any type of cheese, and are perfect for semi-hard sheeps cheeses

Apples with cheddar and pears with stilton are always a winner.
Serve thin slices of prosciutto, ham and sweet or spicy salamis, especially with aged cheese like manchego or pecorino.

If you choose to serve crackers, pick unsalted or lightly salted ones. Bread is a must, you can never go wrong with a baguette. Crusty sourdough with creamy soft ripened cheeses, and grain packed breads for cheddars and hard cheese.

All goods are packed in a re-usable polystyrene esky with a re-usable ice pack.
Freight charges are $15 for up to 15kg. This is to Australian East Coast Capital Cities.  For all other locations we will contact you with freight costing. All goods are freighted thru Fastway Couriers and take 1 to 2 business days to East Coast Capital Cities. All other locations we will contact you.
Despatch days are Monday, Tuesday and Wednesday Only.
